Almond flour pancakes with whipped cream and berries
Ingredients:
* 1 cup almond flour
* 1 teaspoon of baking powder
* 1/2 teaspoon of baking soda
* 1/4 teaspoon of salt
* 2 large eggs
* 1/2 cup almond milk
* 1/4 cup melted coconut oil
* 1 tablespoon of honey
* 1 teaspoon vanilla extract
* 1 cup mixed berries (strawberries, blueberries, blackberries), for serving
* Whipped cream, to serve
Instructions:
1. In a large bowl, combine the almond flour, baking powder, baking soda, and salt.
2. In a separate bowl, beat the eggs, almond milk, coconut oil, honey, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and mix until just combined.
4. Add the berries to the dough and mix gently.
5. Heat a nonstick skillet over medium heat.
6. Pour 1/4 cup of batter into the pan for each pancake.
7. Cook pancakes until golden brown on both sides, about 2 minutes per side.
8. Serve the pancakes warm with whipped cream and berries.
